Question Answer
Food Allergy An abnormal response to a food triggered by the body's immune system. Allergic reactions to food can sometimes cause serious illness and death.
Food Intolerance An unpleasant reaction to food that, unlike a food allergy, does not involve an immune system response. Symptoms can include gas, bloating, constipation, or dizziness.
Cross-Contact This occurs when an allergen-containing food, such as peanuts, comes in contact with a safe food and contaminates it with an allergen.
Celiac Disease An inherited autoimmune disease. When a person with celiac disease consumes any food, beverage, or medication containing gluten their immune system is "triggered" and responds by damaging the lining of the intestinal tract. Symptoms include abdominal pain, diarrhea, and/or a severe skin rash.
Gluten Sensitivity A condition that is not a wheat allergy or an autoimmune disease that does not seem to damage the intestines. Common symptoms include abdominal pain, diarrhea, fatigue, and headaches.
