Sift the flour and salt in a bowl, make a well in the centre
Break in the egg and add a quarter of the milk. Beat well.
Gradually add the rest of the milk and incorporate the flour to make a smooth batter.
Pour the batter into a jug and leave aside for 30 minutes
Put a little bit of oil or butter in a crepe or frying pan
When the pan is hot, pour a thin layer of batter in and swirl around to cover the bottom of the pan
Fry until golden brown/ bubbly on top
Turn carefully with a spatula
Try to flip dramatically in the air
Fry until the other side is also brown
Clean up the mess and try again !

Serve with Lemon and Sugar, maple syrup, or savoury fillings.
